The Chautauqua Gorge is at the very north end of the Fred J. Cusimano Westside Overland Trail. The trail itself is very easy and mostly flat. It is, however, a nice overnight hike. Total trail length is about 24 miles from the southern point to the Gorge. The Gorge can be as easy or as hard as you want it to be.
Hike a short distance to the edge of the Gorge. You can get to the bottom by way of the Overland Trail.... but this isn't any fun. These are marked state game lands and if you duck into the woods here you can reach the Gorge.
Take 474 out of Panama ( about 2 miles, parking lot on your right) or head West on 430 from Mayville( about 2 miles) parking lot on your left, trail either side of the road. Head north on trail about 2.9 miles to the Gorge or take right onto Hannum Road just before parking lot on 430 to go right to the Gorge by car.

CommentI forgot to add that the difficulty rating comes from 'shoeing through 3 feet of snow in the Gorge's 2 bowls. You could actually do some short AT Ski runs...Pines create nice little chutes and the hike back up is a quad burner, so if you aren't in decent shape you'll be spent pretty quick. There is a very narrow ridge that runs the middle of these two bowls and is a great hike back up to do more runs...give a great view of both the Gorge and the two bowls.
